Paella-style one pot rice
Based on a paella style using frozen seafood and vegetables for a quick midweek supper
- 1 tsp olive oil
- 2 medium onions chopped
- 2 red peppers chopped
- 2 garlic cloves crushed
- 3 tbsp Seasoning 1 spice mix
- 200 g paella rice
- 1 litre low salt chicken stock
- 150 g frozen prawns
- 150 g frozen squid sliced into rings
- juice from half a lemon
- small handful fresh parsley
- lemon wedges to serve
Heat the oil in a large wide pan, fry the chopped onions, peppers and garlic slowly until softened.
Add Seasoning 1 and stir through
Add the rice and stir through until coated
Add the stock and simmer gently for 15-18 minutes. Add a splash more water if it becomes very dry.
Add the frozen seafood and nestle into the rice and stock. Bring back up to temperature and simmer for 4-5 minutes.
Squeeze in the lemon and scatter in chopped parsley.
Serve with wedges of lemon.
You could easily substitute the seafood here with other proteins like some cooked chicken thighs.
