Paella-style one pot rice

Based on a paella style using frozen seafood and vegetables for a quick midweek supper

Servings 6 people


  • 1 tsp olive oil
  • 2 medium onions chopped
  • 2 red peppers chopped
  • 2 garlic cloves crushed
  • 3 tbsp Seasoning 1 spice mix
  • 200 g paella rice
  • 1 litre low salt chicken stock
  • 150 g frozen prawns
  • 150 g frozen squid sliced into rings
  • juice from half a lemon
  • small handful fresh parsley
  • lemon wedges to serve


  1. Heat the oil in a large wide pan, fry the chopped onions, peppers and garlic slowly until softened.

  2. Add Seasoning 1 and stir through

  3. Add the rice and stir through until coated

  4. Add the stock and simmer gently for 15-18 minutes. Add a splash more water if it becomes very dry.

  5. Add the frozen seafood and nestle into the rice and stock. Bring back up to temperature and simmer for 4-5 minutes.

  6. Squeeze in the lemon and scatter in chopped parsley.

  7. Serve with wedges of lemon.

Recipe Notes

You could easily substitute the seafood here with other proteins like some cooked chicken thighs.
