These deliciously crunchy chicken goujons are simple to make but super tasty, making them a perfect family treat that everyone can enjoy. Serve with a crisp salad and some new potatoes.
- 120 grams panko breadcrumbs
- 500 grams chicken breasts (approximately four)
- 50 grams plain flour
- 1 large egg beaten
- 4 tbsp Seasoning 1 spice mix
- 2 tbsp olive oil
Preheat the oven to 200°C (Fan 180°C) and line a baking tray
Add the flour to a shallow bowl or plate and add 1 tbsp of Seasoning 1. Mix well.
In a separate bowl, crack an egg and beat well.
In another separate bowl, add the panko breadcrumbs. Add 3 tbsp of Seasoning 1 and mix well.
Lightly dust the chicken strips in the seasoned flour, then dip into the egg mixture. Finally roll the chicken into the seasoned panko breadrumbs, ensuring you fully cover the chicken. Transfer to a plate whilst you coat the rest of the chicken.
Put the chicken on a lined baking tray and drizzle with the olive oil.
Bake for 20 minutes, turning half way through the cooking time, until golden brown and cooked through.
Serve and enjoy.
If you don't have panko breadcrumbs, you can use normal breadcrumbs.
It may be easier to coat the chicken in batches to ensure you get a good coating on each piece of chicken.
